When you walk, bike, or drive by The Merchant you know it was meant to be a coffee shop. It’s got charm, it has style, it’s well…perfect.

And that’s exactly what husband-and-wife combo Mike and Andrea Gillespie thought when they were walking their dogs one day. Andrea said, “If that place ever becomes available, I’m going to turn it into my bakery.”

She had just graduated from the International Baking program at the International Culinary Center in New York. Next thing they knew, a “For Lease” sign was up.

Fast forward to 2021, and The Merchant is Bixby Knolls’ go-to coffee shop and bakery with a true community feel and bustling customer base.

The Merchant focuses on specialty coffee and artisanal baked goodies. While many of the locals know Mike for his hospitable charm and custom latte art, it is wife Andrea who brings the customers back with her incredibly delectable cinnamon rolls, croissants, breads, and other pastries.

She and the bakery crew work long hours each night when the shop is closed, following classical and intricate baking methods that result in what many customers say are the best pastries they have ever tasted. Needless to say, when Mike opens up the shop for customers each morning, the aromas are wonderful!
